The secret? The Hybrid Method. By mixing wheat flour (Weizenmehl) with corn flour, you get the strength of gluten with the flavor of corn.

The Weizenmehl provides the "glue" (gluten) that holds everything together, making the tortilla soft and pliable. The Maismehl provides the color, texture, and that toasted corn flavor we love.

  • 1.5 cups Weizenmehl (Type 405 or 550): This is your standard all-purpose flour.

2. Incorporate the Fat

Add the oil (or room-temperature lard). Rub it into the flour with your fingertips until the mixture looks like fine breadcrumbs.

3. The Hot Water Phase

Slowly pour in the hot water. Start with 3/4 cup and mix with a wooden spoon (be careful, it's hot!). Once it’s cool enough to handle, use your hands to knead. Add more water a tablespoon at a time if the dough feels too dry.
